Bibim Guksu (Korean Spicy Cold Noodles)

Ingredients
- 6 oz somyeon (thin wheat noodles)
- 1/2 cucumber, julienned
- 1 hard-boiled egg, halved
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds

For added flavor, include kimchi or sliced pear as toppings.

Cook noodles according to package instructions. Drain and rinse under cold water.

In a bowl, mix gochujang, soy sauce, rice vinegar, sugar, and sesame oil to make the sauce.

Toss the cold noodles with the sauce until evenly coated.

Divide noodles into serving bowls. Top with julienned cucumber and half a boiled egg.
