Chickpea Paprikash

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 tablespoon tomato paste
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1/2 cup vegan sour cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Notes

Serve over pasta, rice, or with crusty bread for a complete meal.

Instructions

    Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent.

    Add minced garlic and paprika. Stir for 1 minute until fragrant.

    Stir in tomato paste, chickpeas, and vegetable broth. Bring to a simmer.
