- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons sweet paprika
- 1 tablespoon tomato paste
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 cup vegetable broth
- 1/2 cup vegan sour cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Serve over pasta, rice, or with crusty bread for a complete meal.
Instructions

Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent.
