Healthy Chocolate Peanut Butter Cookies

Ingredients
- 2 eggs
- ¾ cup brown sugar
- 1 cup natural creamy peanut butter
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup chocolate chips
- ½ cup peanut butter chips
Notes
Store in an airtight container for up to 5 days. Cookies can be frozen for longer storage.

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, whisk eggs and brown sugar until combined.

Add peanut butter, coconut oil, and vanilla extract. Mix until smooth.

Stir in cocoa powder, baking soda, and salt until a thick batter forms.

Fold in chocolate and peanut butter chips.

Scoop heaping tablespoons of dough onto the prepared baking sheet.

Bake for 9–11 minutes. Cookies will appear soft but will set as they cool.
