Cottage Cheese Egg Bites

Ingredients
- 6 large eggs
- 1 cup cottage cheese
- ½ cup shredded cheese (cheddar, mozzarella, or your choice)
- ½ cup finely chopped vegetables (e.g., bell peppers, spinach, mushrooms)
- ¼ tsp salt
- ¼ tsp ground black pepper

Store in the fridge for up to 5 days or freeze for up to 3 months. Reheat in the microwave for a quick breakfast.

Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with silicone liners.

In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
