Garlic Parmesan Kale Pasta
A simple and flavorful pasta dish featuring tender kale sautéed with garlic, tossed with angel hair pasta, and finished with Parmesan cheese.
Ingredients
- 1 bunch (1/2 lb) kale
- 1/2 lb angel hair pasta
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan
- Salt and pepper, to taste
- Pinch of red pepper flakes (optional)
Notes
For added protein, consider topping with grilled chicken or a poached egg. Whole wheat pasta can be used for a nuttier flavor.

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.

While the pasta is cooking, remove the stems from the kale and tear the leaves into bite-sized pieces.

In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

Add the kale to the skillet and cook until wilted, about 5 minutes.

Add the cooked pasta to the skillet with the kale. Toss to combine.

Remove from heat and stir in the grated Parmesan. Season with salt, pepper, and red pepper flakes, if using.
