Japchae (Korean Glass Noodle Stir-Fry)
A traditional Korean dish made with sweet potato glass noodles stir-fried with a variety of vegetables and beef in a savory-sweet sauce.
Ingredients
- 4 ounces sweet potato starch noodles (dangmyeon)
- 4 ounces beef (filet mignon or pork shoulder), cut into strips
- 2 large dried shiitake mushrooms, soaked and sliced
- 1 small carrot, julienned
- 1/2 onion, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 2 cups spinach
- 2 teaspoons soy sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- Salt and pepper, to taste
- 1 tablespoon vegetable oil
- 1 teaspoon sesame seeds

Japchae can be enjoyed warm or at room temperature. It's a popular dish for Korean celebrations and gatherings.

Cook sweet potato noodles according to package instructions. Drain and rinse under cold water. Toss with a little sesame oil to prevent sticking.

In a bowl, marinate beef and shiitake mushrooms with soy sauce, sugar, sesame oil, minced garlic, salt, and pepper. Let sit for 10 minutes.

In a large skillet or wok, heat vegetable oil over medium-high heat. Add marinated beef and mushrooms, and stir-fry until cooked through. Remove and set aside.

In the same skillet, stir-fry carrots, onions, and bell peppers until tender. Add spinach and cook until wilted.

Add cooked noodles and beef mixture back into the skillet with vegetables. Toss everything together until well combined and heated through.

Sprinkle with sesame seeds before serving.
