Pad Thai
A classic Thai stir-fried noodle dish featuring rice noodles, protein of choice, eggs, and a tangy-sweet sauce, garnished with peanuts and fresh herbs.
Ingredients
- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 1 cup protein of choice (chicken, shrimp, or tofu)
- 1 cup bean sprouts
- 1/4 cup chopped green onions
- 1/4 cup crushed peanuts
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Lime wedges, for serving

Customize with your preferred protein and adjust the spiciness to taste.

Cook rice noodles according to package instructions. Drain and set aside.

In a small bowl, mix together fish sauce, soy sauce, brown sugar, lime juice, and chili powder to create the sauce.

Heat oil in a large skillet or wok over medium heat. Add garlic and sauté until fragrant.

Add protein and cook until done. Push to one side of the pan.

Pour beaten eggs into the other side and scramble until cooked.

Add cooked noodles and sauce to the pan. Toss everything together to combine.

Stir in bean sprouts and green onions. Cook for another 2 minutes.
