Peach Crisp for One
A single-serve peach crisp with a spiced oat topping — quick, cozy, and perfect with a scoop of ice cream.

Ingredients
- 1 medium peach, chopped
- 1 tsp sugar
- 1 tsp all-purpose flour
- ⅛ tsp ground ginger
- ¼ tsp vanilla extract
- 2 tbsp old-fashioned oats
- 1 tbsp all-purpose flour
- 1 tbsp brown sugar
- 1 tbsp softened butter
Notes
Can use canned peaches; drain before using. Serve with vanilla ice cream or whipped cream.

Preheat oven to 350°F (175°C).

In a small bowl, mix chopped peach, sugar, flour, ginger, and vanilla. Transfer to a ramekin.

In another bowl, combine oats, flour, brown sugar, and butter until crumbly.

Sprinkle topping over the peach mixture.

Place ramekin on a baking sheet and bake for 30 minutes or until topping is golden and filling is bubbly.
