Sausage & Peppers
A classic Italian-American dish featuring sausage cooked with colorful bell peppers and onions in a savory tomato sauce.
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage links (sweet or hot)
- 1 large red bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup crushed tomatoes
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish

Serve over pasta, rice, or in hoagie rolls for a hearty meal.
Instructions

Heat olive oil in a large skillet over medium heat.

Add sausage links and cook until browned on all sides, about 5-7 minutes. Remove and set aside.

In the same skillet, add sliced bell peppers and onion. Cook until softened, about 5 minutes.

Add minced garlic, oregano, and red pepper flakes (if using). Cook for 1 minute.

Stir in crushed tomatoes and bring to a simmer.

Slice the browned sausages into 1-inch pieces and return them to the skillet.

Cover and simmer for 10-15 minutes until sausages are cooked through.
